The training abattoir and cutting plant was established in 1992 as part of the Department of Animal Science. In the abattoir it is possible to slaughter poultry, rabbits, sheep, goats and pigs (skinning) and analyse carcass traits, monitor the quality of the meat (pH, conductivity, meat colour) and produce various kinds of meat products. The main purpose is to study and improve the qualitative characteristics of animals bred for meat. As part of the progeny testing of Simmental sires (for AI), dissection of carcass halves and monitoring carcass quality (percentage of individual pieces and tissues) and meat quality (pH, colour) take place.
