Together with the Chair of Dairy Science (Biotechnical Faculty, University of Ljubljana), the Institute is the main Slovene institution for research, educational and professional activities in the field of dairy science and probiotics. The Institute has a more than 50-year tradition in the field of dairy science and in the 1990s, dairy science was joined by the field of probiotics. In research, attention is primarily devoted to the study of lactic acid bacteria from various environments, with a stress on antimicrobial activity and mechanisms of probiotic activity and studying the role of diet, human milk and probiotics on intestinal microbiota of humans and animals. Development work today includes the development of modern technological procedures of fermentation of dairy products, the development of modern analytical methods for the control of the chemical, microbiological and sensory quality of milk and milk products and the development of probiotic products in groups of foods and dietary supplements. Within the Institute operates the IML-PRO Laboratory, which is a neutral laboratory that performs accredited (LP-062) and non-accredited tests for any clients, in accordance with international standard ISO/IEC 17025:2005 and applicable legislation.
