The main mission of the Chair of Dairy Science is education in the field of dairy science, which is inseparably connected with scientific research work, which takes place in close association with the Institute of Dairy Science and Probiotics (IML-PRO). The educational process is carried out at all levels (BSc, MSc, PhD) of various Bologna study programs at the External link to Biotechnical Faculty (BF) Open in new window, External link to University of Ljubljana Open in new window. Through the lectures at BSc and MSc cycles students gain basic and advanced knowledge about the properties of milk and dairy products, milk processing, about the technological processes of fermented dairy products manufacturing together with the accompanying biochemical processes, about functional foods and their functional ingredients (probiotics, prebiotics, bioactive peptides...) and about the importance of ensuring safety and quality of food. Most of the theoretical knowledge is practically applied in laboratory work, where according to given instructions, students perform analyzes of milk, they make fermented dairy products (yogurt, cheese) and analyze their chemical and sensory properties, as well as they get acquainted with the execution of some tests that describe safety and functional aspect of certain lactic acid bacteria. At last but not least, there are also some Bologna second degree students present all the time at the Chair of Dairy Science who perform the practical work of their master's theses. At the Chair of Dairy Science on regular basis PhD students work as well, where they in-depth their knowledge of the specific area in which they have worked and from which the resulting PhD thesis should make a substantial original contribution to the field of study.
