Acid whey, which is a by‐product of processing milk into cottage cheese and some other products and is less suitable for further processing, was used for the production of vitamin B12 in bacteria of the subspecies Propionibacterium freudenreichii subsp. freudenreichii.They have also described improved analytical method for vitamin B12. The example shown contributes to a better use of the by‐product of dairy production, thus reducing the environmental impact, is economically interesting for obtaining value‐added products, and also contributes to a better supply of vitamin B12 to the population.
